Sweet Peppers, Blackened on the Grill


I skinned these and dressed them with balsamic vinegar, olive oil, salt and pepper. I pureed some parsey and capers with oil and salt-preserved lemon. I put the peppers and parsley goo on a roll with fresh mozzarella. Good sammidge.

Did you get inspired at the farmers' market, or did you just get a craving?

Actually, these very tasty peppers came from Costco, and I built the sandwich around that. A big tub of fresh mozzarella was a good deal at BJ's, and parsley and capers seemed to be a good match.
